Chicken & Leek Soup
  1. Sweat the leeks in olive oil for ten minutes until they start to brown a little

  2. Add the pearl barley and mix through for two minutes

  3. Throw in the chicken thighs and cover with the stock

  4. Bring to the boil then drop to a simmer for 30 minutes

  5. Pull the thighs out and shred with a fork then return to the pot

  6. Finish with parsley and pepper

  7. Add extra water as needed
