Make the Tofu Glaze by mixing 1 tbsp rice vinegar, 2 tbsp soy sauce, 2 tbsp coconut amino, ½ tsp brown sugar, and ¼ tsp ginger powder.
Cook the tofu with the glaze.
Assemble the rice paper rolls with the cooked sushi rice, tofu, carrot, cucumber, avocado, and nori sheets.
Fry the assembled rolls in oil until crispy.
Serve with soy sauce and wasabi.
