Last week, I baked a loaf of sourdough that my kids for whatever reason didn’t feel like eating. This week, I cubed it up and tossed it in a French toast mixture and baked it. Suddenly, the family was interested.

In a large bowl, add your cubed sourdough and pour the melted butter over the bread. Toss to make sure it’s well incorporated. Preheat your oven to 350°F.
In a smaller bowl, add eggs, milk, salt, cinnamon, and vanilla and mix well. Pour over the bread and allow to sit for 10 to 15 minutes to make sure the liquid fully absorbs.
In a greased 8”x10” pan or large cast iron skillet, add your bread mixture. Top with sugar/cinnamon mixture and chopped pecans.
Bake for 25 to 30 minutes, removing from the oven once the egg has set. Serve with maple syrup and any other toppings of your choice. Whipped cream maybe? Fruit? Why not. Serve warm.
