Chocolate Espresso Ricotta Torte
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or non-stick spray.

  2. In a large mixing bowl, whisk together ricotta cheese and powdered sugar until smooth and creamy.

  3. Stir in the cocoa powder, cooled espresso, eggs, vanilla extract, baking powder, and salt. Mix until well combined. If using, fold in dark chocolate chips for extra richness.

  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  5. Bake for 30-35 minutes, or until the torte is set and a toothpick inserted in the center comes out mostly clean.

  6. Let the torte cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  7. Once cool, dust with cocoa powder or powdered sugar, slice, and enjoy!
