Get skillet heated on a medium high heat. Melt a stick of butter in it and once the butter is bubbling then place your seasoned fillets in the skillet seasoned side down and then season the other side with blackened seasoning. Cook for about 5 mins until fish is tender.
Get your pot on a low heat and throw the butter in to melt, once melted put in the flour. Stir continuously until you get a peanut butter color roux.
Next up throw in the garlic, onions, bell peppers, celery. Cook that down till the trinity gets tender.
Add in the seafood broth, heavy cream, cajun power garlic sauce, and water if needed depending on the thickness. Put in the cajun seasoning and salt if needed. Also if you want Rotel in it then at this point add it in there. Let simmer for 30-40 mins on low.
Lastly add in the crawfish tails, green onions, and parsley flakes. Let it cook down 10-15 mins then it's ready to eat.
Cook the jumbo eye rice according to package instructions.
