Preheat oven to 400 degrees.
In a large bowl, combine chicken, bread crumbs, egg, celery, carrot, garlic, onion, ranch seasoning, 3 tbsp buffalo sauce, salt + pepper & mix until well combined.
Roll into balls and place on a greased sheet pan.
Bake for 25 minutes or until the meatballs look golden brown & slightly crispy.
While meatballs are baking, prepare rice & veggies.
Remove meatballs from oven when they're done and mix with remaining ⅓c of buffalo sauce.
Add rice, veggies, and meatballs to meal prep containers and top with green onions & ranch/blue cheese!
