Preheat oven to 180°C
Prick sweet potatoes all over and brush with oil
Bake for 45-50 minutes until soft (or air fry for 25 minutes or microwave)
Once cooled, slice open sweet potato and scoop out the inside
Mix the sweet potato with chickpeas, spring onion, pepper and harissa, and slightly mash with a fork
Add mixture back to sweet potato skin and top with cheese
Put back in oven or air fryer for a few minutes until cheese is golden and crispy
