Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the cottage cheese and eggs in a blender and process until completely smooth and creamy.
Transfer the mixture to a bowl, then add almond flour, baking powder, and a pinch of salt. Stir well until a thick dough comes together.
Divide the dough into 6 equal portions, spooning them onto the prepared baking sheet. Bake for 18–20 minutes, or until the rolls are puffed and lightly golden on top.
