For the Syrup
Instructions
Beat 1 cup of sugar with the mastic tears in the blender and pour it into a large bowl. If you use vanilla instead of the mastic drops just add it in a bowl with the sugar
Add the rest of the solid ingredients into the bowl and mix well
Add the coconut milk, mix well and leave the mixture for 15 minutes so as the semolina absorbs all the coconut milk
Add the mixture to a pyrex and bake in a preheated oven at 180°C for 45 minutes.
When the cake has cooled down, make the syrup and pour it over the cake.
Serve once the şambali has absorbed all the syrup.
