Gut-healthy Udon Noodle Bowls With Special Sauce
  1. Chop your veggies and cook the noodles according to package instructions. Rinse with cold water and set aside (I do like to drizzle the noodles with sesame oil but that's optional).

  2. Next, make the special sauce. Add all of the sauce ingredients to a bowl and whisk until smooth. Taste and adjust seasonings as needed.

  3. Last, assemble your meal. In a large container, add the sauce to the bottom, followed by the noodles, and all of the veggies on top. If eating right away, you can add the avocado. For meal prep, add the avocado when ready to eat.

  4. Cover the container and store in the refrigerator. When ready to eat, shake the container to coat everything well, open, and enjoy!
