Mushroom & Caramelized Onion Soup With Cheesy Toasties
  1. Melt butter in pot, add onions, bay leaves, thyme, and salt. Cook 30–40 minutes until caramelized.

  2. Add garlic, cook 1 minute. Deglaze with white wine, simmer until mostly reduced.

  3. Sprinkle in flour, stir, and cook 2 minutes. Slowly whisk in broth. Simmer 20–25 minutes.

  4. In skillet, heat butter and oil. Add garlic, cook briefly. Stir in mushrooms, thyme, salt, and pepper. Cook 10–12 minutes until browned.

  5. Add mushrooms to soup. Simmer to meld flavors.

  6. Toast baguette slices, top with vegan cheese, and broil until bubbly.

  7. Serve soup with toasties, garnish with thyme and parmesan.
