Creamy Gochujang Rice Bowl
  1. Soak and drain cashews

  2. Blend soaked cashews with 1 cup water, gochujang, soy sauce, garlic cloves, sesame oil, maple syrup, ginger chunk, and rice vinegar until creamy

  3. Cook edamame in salted water

  4. Cook lotus root in salted water

  5. Cook brown rice

  6. Air-fry tofu

  7. Assemble bowl with brown rice as base

  8. Top with edamame, lotus root, cabbage, cucumber, air-fried tofu, spring onion, and pickled veggies

  9. Drizzle creamy gochujang dressing over bowl

  10. Garnish with sesame seeds
