Mix flour, salt and water together until the mixture becomes flaky, then knead to form a dough.
Cover and allow the dough to rest for two hours, then knead again and divide the dough.
Roll into individual balls – each will become one noodle.
Return the balls to the bowl and cover with oil – rest for a further two hours.
When ready to make noodles, pat each ball dry on paper towel before rolling out flat.
Then stretch and smack down on a clean flat surface.
Press down the middle of the flat dough using a chopstick, then pull and break apart at one end to form a long noodle.
Hang noodles individually while you make the rest.
Then lower noodles carefully into salted boiling water and cook for 3-4 minutes.
Drain and enjoy on their own or with a sauce.
