Fresh Chinese Noodles
  1. Mix flour, salt and water together until the mixture becomes flaky, then knead to form a dough.

  2. Cover and allow the dough to rest for two hours, then knead again and divide the dough.

  3. Roll into individual balls – each will become one noodle.

  4. Return the balls to the bowl and cover with oil – rest for a further two hours.

  5. When ready to make noodles, pat each ball dry on paper towel before rolling out flat.

  6. Then stretch and smack down on a clean flat surface.

  7. Press down the middle of the flat dough using a chopstick, then pull and break apart at one end to form a long noodle.

  8. Hang noodles individually while you make the rest.

  9. Then lower noodles carefully into salted boiling water and cook for 3-4 minutes.

  10. Drain and enjoy on their own or with a sauce.
