Preheat oven into 180c
In a bowl add soy sauce, rice vinegar and mix to combine, add the tofu slices and let it sit for a few minutes.
Heat a oven safe pan, add oil and grill the tofu
To a blender, add the cherry tomatoes, coconut milk, sambal, onion, tomato purée, salt and sugar and blend until smooth. If it separates keep blending, might take several minutes. Pour the sauce over the tofu, and let it simmer for a few minutes.
Transfer to the oven and cook for 15-20min or until the sauce is thickened and bubbling vigorously and everything is charred in places on top.
Finish with a drizzle of chilli oil (optional) and fresh coriander. Serve swith steamed rice. Enjoy!
