Heat the oven to 200C fan
Slice the blocks of halloumi widthways with a very sharp knife as thinly as you can - literally wafer thin
Finely slice the onion
Place the sliced halloumi and onion in a mixing bowl, drizzle with a little oil, before adding the tikka paste
Give it a really good stir until everything is combined and coated
You can drizzle a small amount of tikka paste on top if you like
Cover the tin in foil and bake in the oven for 10 minutes
Remove the foil and bake in the oven for a further 25 minutes or until the mixture is bubbling and the halloumi is a lovely golden brown colour
Add a smear of mayo, followed by some mango chutney on warmed flatbreads
Top with fresh lettuce
Fill with the halloumi and onion and a little more mayo
You can eat them as they are or you can tuck in the sides and fry them gently on each side for a minute or two, to give them a lovely golden crust
