Bring salted water to a boil and cook pasta according to package directions
Grate or cut courgette into ribbons and mince roasted pistachios
Add courgette and pistachios to the garlic and sauté for 3-5 minutes
Add lemon juice and splash of pasta water to the skillet
Mix in cooked pasta and parmesan
Finish with olive oil, extra lemon juice, pistachios, and parmesan
