In a large bowl, mix the mashed potatoes, melted butter, smoked salt, pepper, and flour into a soft dough.
Turn out onto a floured surface, knead lightly until smooth, then divide in half.
Roll each half into a 1cm thick circle and cut into quarters (farls). Heat oil in a heavy pan or griddle, cook farls ¾ minutes per side until golden and crisp. Keep warm.
Fry bacon until crisp, then fry eggs in the bacon fat to your liking.
Serve two farls per plate, topped with smoked bacon and a fried egg.
