Brown 450g ground beef in a pan, then add diced red onion and minced garlic cloves and cook for 2-3 minutes on medium-low heat
Stir in Italian herbs, chili powder, paprika, and tomato paste, adding a little water to make it more saucy
Add a handful of spinach and cook until wilted, then season with salt, pepper, and any other desired seasonings
Slice cooked sweet potatoes lengthwise and fill each potato with the beef mixture
Top each boat with 40-50g light mozzarella
Bake at 450°F for 5-10 minutes until the cheese is melted and bubbly
