Heat the milk until almost boiling
Add the lemon juice, stir well and take off the heat
After a few minutes, the milk will have curdled, strain through a sieve lined with a cheesecloth, then rinse the curds with cold water
Squeeze out any excess liquid
Place on a plate and put a heavy weight on top (the pan you used for the milk filled with water is a good option) then leave for an hour
