Gut Health Cheesecake (GF/EF)
  1. Make the crumb base by mixing everything in a large bowl until well combined.

  2. Transfer the mix to a small cake tin and press the mixture down using the back of a spoon.

  3. Chill in the fridge for 30 min.

  4. Meanwhile, in a large bowl, mix the ingredients for the yoghurt base.

  5. Pour over the crumb base, even with a spatula and let it set in the fridge overnight.

  6. Top with some lemon zest and optional berries.

  7. Only add them to the middle, because the weight of them can pull the edges of the cheesecake down.
