Lay 2 slices dried beef on a clean work surface, slightly overlapping (if using roast beef or ham, use only 1 slice of meat per roll up). Spread with one-forth of the cream cheese (about 2 Tbsp.). Place a pickle on one side of the meat and roll up.
Repeat with remaining ingredients. Cover and chill at least 1 hour before serving. To serve, slice wraps crosswise into ¾-inch pieces.
