Grate the tomatoes, discarding the skins. Drain in a sieve over a bowl, reserving the tomato juice. Mix the tomato with red wine vinegar, olive oil, oregano, salt and pepper. Set aside.
Fry the red onion in the neutral oil, cut-side down until deeply charred on all cut sides. Separate the layers, then pickle with salt, sugar, white wine, red wine vinegar and a few tbsp reserved tomato juice.
Blend the feta, Greek yoghurt, lemon zest and juice, and a splash of tomato juice until smooth and creamy.
Mix the flatbread ingredients into a dough, rest for 10 min, divide and roll out. Dry-fry over medium-high heat until golden on both sides, then finish with olive oil and salt.
Season the snapper with olive oil salt and pepper. Heat a frying pan with olive oil and baking paper, then cook the fish until golden and crisp. 3-4 min. Flip and cook through. Char the lemon cheek in the same pan.
Fry the capers in olive oil until crisp. Spoon over fish when hot.
