Greek Inspired Crispy Snapper With Grated Tomato, Whipped Feta & Caper Oil
  1. Grate the tomatoes, discarding the skins. Drain in a sieve over a bowl, reserving the tomato juice. Mix the tomato with red wine vinegar, olive oil, oregano, salt and pepper. Set aside.

  2. Fry the red onion in the neutral oil, cut-side down until deeply charred on all cut sides. Separate the layers, then pickle with salt, sugar, white wine, red wine vinegar and a few tbsp reserved tomato juice.

  3. Blend the feta, Greek yoghurt, lemon zest and juice, and a splash of tomato juice until smooth and creamy.

  4. Mix the flatbread ingredients into a dough, rest for 10 min, divide and roll out. Dry-fry over medium-high heat until golden on both sides, then finish with olive oil and salt.

  5. Season the snapper with olive oil salt and pepper. Heat a frying pan with olive oil and baking paper, then cook the fish until golden and crisp. 3-4 min. Flip and cook through. Char the lemon cheek in the same pan.

  6. Fry the capers in olive oil until crisp. Spoon over fish when hot.

  7. Serve all together and enjoy!!
