Copycat Cava Bowls
  1. Add chicken thighs to a bowl with lemon juice, honey, garlic, salt, and Italian seasoning. Marinate for at least 15 minutes.

  2. Cook chicken in a pan for 4 minutes each side. Remove and cut into bite-size pieces.

  3. Cook rice according to package directions.

  4. Mix all tzatziki ingredients in a small bowl and let sit to absorb flavors.

  5. Finely slice red onion and add to a jar with vinegar, water, and sugar. Let sit for 4 hours if possible.

  6. Dice tomatoes and cucumbers. Add to a bowl with dill, garlic, lemon and lime juice, salt, olive oil, and feta.

  7. Preheat oven to 400°F. Cut pita into small strips, toss with olive oil, salt, and oregano. Bake for about 8 minutes until crispy.

  8. Assemble bowls by layering rice, chicken, cucumber tomato salsa, pita chips, and pickled red onions. Top with additional feta and serve.
