Marinate chicken with lemon juice, lemon zest, chopped garlic cloves, ⅛ cup olive oil, 2 tbsp Italian seasoning, salt and pepper
Cook marinated chicken on a cast iron skillet over medium heat until fully cooked
Chop cooked chicken into bite sized pieces
Dice shallot, Persian cucumbers, and chop fresh dill and parsley
Halve kalamata olives and crumble feta cheese
Combine dressing ingredients: lemon zest, lemon juice, ⅓ cup olive oil, Dijon mustard, 1 tbsp Italian seasoning, grated garlic cloves, honey, salt and pepper in a jar
Seal jar and shake dressing until fully emulsified
Combine chicken and salad ingredients in a bowl
Pour dressing over salad and toss
Adjust seasoning as needed
