Cook Rigatoni
Boil rigatoni in salted water for 10 minutes.
Reserve half a cup of pasta water before draining.
Cook Chicken
Slice chicken breast in half.
Season both sides with Cajun seasoning, salt, smoked paprika, onion powder, garlic powder, Italian seasoning, and black pepper.
Cook chicken 6 minutes per side.
Slice cooked chicken.
Make Sauce
Heat butter and oil.
Sauté green bell pepper, red bell pepper, and onions for 4 minutes.
Sauté garlic for 30 seconds.
Add diced tomatoes.
Season with Cajun seasoning, smoked paprika, black pepper, salt, garlic powder, onion powder, Italian seasoning, chicken bouillon, and red pepper flakes.
Add heavy whipping cream, cream cheese, and reserved pasta water.
Simmer for 5 minutes until sauce thickens.
Stir in Parmesan and mozzarella until melted.
Combine
Add rigatoni to the sauce.
Toss to combine.
Top with sliced chicken.
