Honey Bastard Chicken
  1. Season chicken thighs with salt and pan-fry until crispy.

  2. Remove chicken from the pan and set aside.

  3. In the same pan, sauté onion, parsley stalks, garlic, and thyme.

  4. Add Dijon mustard, wholegrain mustard, honey, white wine, and chicken stock/water. Simmer.

  5. In a bowl, mix flour with some pan juice to create a paste. Add to the pan with creme fraiche/sour cream.

  6. Return chicken to the pan and simmer until heated through.

  7. Serve with optional parsley leaves and choice of side dish.
