Chickpea "Cookie Dough"
  1. Drain and thoroughly rinse the chickpeas.

  2. Comb through them thoroughly to remove every shell, then rinse again.

  3. Combine chickpeas, peanut butter, vanilla extract, cinnamon, salt, and maple syrup in a high speed blender/food processor. Blend until fully incorporated, with a cookie dough-like texture.

  4. Fold in chocolate chips and walnuts.

  5. Enjoy!
