In a small bowl add raisins to lukewarm water and allow to soak for 15 minutes
In a large bowl combine eggs, oil, sugar, flour, baking powder, baking soda, vanilla extract, cinnamon and nutmeg
Add shredded carrots and crushed pineapple and mix until combined
Fold in raisins and walnuts to the batter
Transfer to a 9x13 greased baking dish
Bake at 350 F for 45-55 minutes
Combine ingredients for icing and blend until smooth
Once cake is completely cooled, top with icing and walnuts
