  1. Add the tomatoes, cubanelle pepper, cucumber, red onion, and garlic to a blender.

  2. Blend on high speed for about 2 minutes.

  3. Slowly add the rice wine vinegar, salt, and olive oil to the blender while blending.

  4. Refrigerate for 6 hours or overnight before serving.
