Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
Sprinkle an even layer of shredded Parmesan onto the parchment paper. This forms the crispy base.
Arrange the onion slices in a single layer on top of the cheese, leaving space between each ring.
Lightly brush the onion rings with olive oil. Sprinkle with salt, garlic powder, and paprika to taste.
Bake for 20 minutes, or until the cheese is golden and the onions are lightly caramelized.
Allow chips to cool for 10 minutes on the tray. They will crisp up more as they cool.
Carefully lift the cheese-onion sheet and break into bite-sized chips. Serve warm or at room temperature.
