Hot Chocolate Ganache Cake
  1. Preheat oven to 165°C. Line or grease a 27 × 20 cm baking dish.

  2. In a bowl, whisk eggs + white sugar + brown sugar until combined.

  3. Add yogurt, vanilla, and 150 ml oil. Whisk until smooth.

  4. Sift in flour, cornstarch, cocoa, baking powder, baking soda and salt. Mix gently until just combined.

  5. Add the hot coffee and whisk until smooth, thin batter forms.

  6. Pour into the greased pan.

  7. Bake 28–35 minutes, depending on your oven. Remove when toothpick has moist crumbs, not clean.

  8. Let it cool for 5-8 mins then poke holes with a fork.

  9. Heat cream until steaming (not boiling).

  10. Pour hot cream over the chocolate.

  11. Let sit 2 minutes then whisk slowly until smooth and glossy.

  12. Add 1 tbsp butter and whisk it in.

  13. Pour the warm hot chocolate over warm cake. Enjoy warm!

  14. PRO TIP: If you want the cake to be extra gooey, pour warm chocolate milk after poking hole, wait 5 mins and then pour the chocolate ganache!
