Preheat oven to 350F and line a baking sheet with parchment paper or a silicone mat.
In the bowl of a stand mixer fitted with a paddle attachment (or in a large mixing bowl with a handheld electric mixer), combine butter and confectioner's sugar, along with vanilla extract, almond extract, and egg. Mix until combined.
Add Bisquick baking mix, mixing on low speed just until combined.
Roll dough out to ¼" thickness in between two pieces of parchment paper. Transfer dough to the refrigerator and chill for about an hour.
Use cookie cutters to cut out shapes from the dough. Re-roll the scraps of dough and repeat.
Decorate cookies with sprinkles if desired, then transfer to prepared baking sheet. Bake for 6-8 minutes, just until edges start to turn golden.
Remove from oven and transfer to a cooling rack to cool.
