Wash, peel, and dice apples into small cubes
Add water and simmer on medium for 10–15 minutes until soft
Blend into a smooth purée, then add gelatin and mix
Whip on high speed for 20 minutes — it will suddenly triple in volume and turn white
Transfer to a parchment-lined mold, cover with plastic wrap, and refrigerate 2–3 hours
