  1. Marinate the chicken thighs with soy sauce and sugar.

  2. Prepare the wet batter by beating the egg.

  3. Prepare the dry batter by mixing the cake flour, rice flour, panko breadcrumbs, ginger powder, chicken powder, paprika, garlic powder, onion powder, salt, and white and black pepper.

  4. Dip the marinated chicken into the wet batter, then coat it with the dry batter.

  5. Air fry the chicken at 190°C for 14-16 minutes, brushing with neutral oil after 4-5 minutes and flipping and brushing the other side a couple of minutes before the timer is done.

  6. Adjust the cooking time as needed.
