Heat two bags of frozen fire roasted corn on the stove
Let the corn cool in the refrigerator until cold
Chop cucumber, red bell pepper, and shallot using a veggie chopper
Combine the cold corn, chopped vegetables, and black beans in a bowl
Add feta cheese to the mixture
Stir in light mayonnaise
Add juice of one lime
Season with salt, garlic powder, onion powder, and chili powder
Add avocado just before eating to prevent browning
Serve with tortilla chips for dipping
