  1. Place the beef, onion, garlic, chipotle chiles, cumin, oregano, black pepper, and salt in a slow cooker.

  2. Pour in the beef broth or water and squeeze in the lime juice.

  3. Cover and cook on low for 8-10 hours, until the beef is very tender.

  4. Remove the beef from the slow cooker and shred it using two forks.

  5. Strain the cooking liquid and skim off any excess fat.

  6. Return the shredded beef to the slow cooker and stir in some of the cooking liquid to moisten the meat.

  7. Serve the barbacoa in tacos, burritos, or on its own with your favorite toppings.
