Fluffy Buttermilk Pancakes
  1. In a large mixing bowl, combine eggs, sugar, vanilla, cooled butter, buttermilk, and mix.

  2. In another bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Add the dry ingredients to the wet, and mix with spatula ONLY until flour is no longer visible. Do not over-mix, the batter should still be lump. Allow to rest on counter for 30 mins.

  4. On med heat, add butter and dollop batter to desired pancake size. Flip when bubbles surface and edges start to brown. Check to see the center has fully cooked, then transfer to plate. Repeat until all batter has been cooked.

  5. Enjoy with more butter, syrup, or your favorite pancake toppings!
