Add 2 cups flour, yeast, sugar, and water in mixer. Using the dough hook, mix for 5 minutes on low speed.
Add in salt and remaining flour. While this is mixing, add in butter 1 tablespoon at a time. Mix for 5 minutes on low speed. Dough should start pulling away from the bowl.
Put dough into a greased bowl, roll dough around so it's fully coated with oil. Cover bowl with plastic wrap. Set aside for about an hour. It should double in size.
Lightly flour your counter, separate dough into 6 equal pieces.
Make dough into rectangles, fold into thirds. Pinch like in the video.
Put rolls onto tray lined with parchment paper. Grease plastic wrap and set aside for 30 minutes. While your oven heats to 375°F.
Score each roll down the center with a lame or knife. This helps the roll expand.
Whisk egg and milk. Spread on dough.
Bake about 20 minutes, or until golden brown.
