Sugar Free Keto Marshmallow Rice Krispie Treats
  1. Line a 8 inch pan with parchment paper.

  2. In a large saucepan, melt butter over medium heat then add in all the marshmallows except ½ cup. Reduce the heat to low and stir to prevent them from clumping or burning.

  3. Remove from heat and stir in the vanilla. At this step, you can also add another extract if you want a flavored one: using chocolate cereal? Consider using peppermint for a wintery treat!

  4. Be careful to move quickly here, or your marshmallows will harden. Add the cereal and the remaining ½ cup of marshmallows then stir.

  5. Pour into the prepared baking dish and gently press. Do not press firmly or you will have stiff marshmallow bars. Allow to set.
