For the Fries: Preheat oven to 400°F. Cut the potatoes into fries, spray with avocado oil, and season with salt, pepper, and paprika. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
For the Beef: In a skillet, heat a drizzle of olive oil over medium-high heat. Add the sliced beef and season with salt, pepper, cumin, and paprika. Cook for 5-7 minutes, stirring occasionally, until the beef is cooked through.
For the Tomato Sauce: In a saucepan, sauté the onion and garlic in a drizzle of olive oil until softened. Add the crushed tomatoes, tomato paste, red pepper flakes, paprika, cumin, and salt and pepper to taste. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens.
To Assemble: Place the crispy fries on a plate, top with the cooked beef, and drizzle the tomato sauce over the top. Garnish with a dollop of Greek yogurt, chopped chives, and a drizzle of melted butter.
