Vegan Chocolate Cherry Oatmeal Cookies
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Make the flax egg by mixing the ground flaxseed with water and allow it to sit for 5 mins.

  3. In a medium-sized bowl, cream together the vegan butter and brown sugar until the mixture becomes lighter in color.

  4. Add in the flax egg and vanilla extract to the creamed butter and sugar, mix until well combined.

  5. Add the oats, flour, baking soda, and salt on top of the wet ingredients. Use a fork to sift them together.

  6. Mix the dry and wet ingredients together until the mixture forms a sticky dough. Fold in the chopped cherries and dark chocolate chunks or chips

  7. Use a cookie scoop or tablespoon to scoop about 2 tbsp of dough into your palm and roll into balls. Place about 2" apart on the sheet. Gently press down on the balls to flatten them into a disc about ½” thick.

  8. Bake for 13-14 minutes. Let them cool on the baking sheet for 2-3 minutes before transferring to a wire cooling rack.
