Leftover Mashed Potato Balls
  1. Mix 3 cups cold leftover mashed potatoes with 1 egg, 1 heaping cup of cheddar cheese, some chives (or other herbs), salt and pepper.

  2. Scoop into balls on a parchment-lined baking sheet and refrigerate until solid.

  3. Heat oven to 400F.

  4. Pour some cornstarch into a dish.

  5. Roll the balls in the cornstarch and return to the baking sheet.

  6. Spray with cooking spray.

  7. Bake for 15-20 minutes or until golden.

  8. If you want them darker you can put under the broiler for a few minutes.

  9. Let cool 5 minutes and enjoy!
