Heat oven to 425°F. Place salmon a rimmed baking sheet. Brush with 1 Tbsp rice vinegar, sprinkle with Cajun seasoning and ¼ tsp salt, and roast until opaque throughout, 10 to 12 minutes.
Meanwhile, in a bowl, whisk together ginger, honey, remaining vinegar, and ¼ tsp each salt and pepper. Toss with vegetables and mint. Serve with salmon.
