Cheesy Leeks & Beans With Garlicky Breadcrumbs & Tangy Pickled Onions
  1. Preheat your oven to 180°C fan and boil kettle to soak cashews

  2. Roast broccoli for 15 mins or until starting to crisp and char

  3. Whilst the broccoli cooks, slowly caramelize the leeks for 10 mins with a pinch of salt, then add garlic and spices and cook for 2 mins more, then turn off the heat

  4. Blend the sauce ingredients together

  5. Add the sauce to the leeks and add the beans plus most of the can juice

  6. Turn the heat on and warm through so the sauce thickens up, stirring continuously

  7. Add the broccoli to the dish

  8. Prepare garlicky breadcrumbs by whizzing up bread into crumbs and frying with olive oil, garlic powder and salt until crispy

  9. Prepare quick tangy pink pickled onions by mixing sliced red onion with lime juice and salt

  10. Ladle into bowls, top with garlicky breadcrumbs and pickled onions, drizzle with optional chilli oil and serve with bread
