Cook pasta in well-salted water
Brown sausage in olive oil until deeply caramelized
Add minced garlic and cook for 30 seconds
Deglaze with white wine and reduce
Add capers and crushed tomatoes, simmer for 10 minutes
Mix egg yolks and parmesan together with heavy black pepper in a bowl
Drain pasta and reserve some pasta water
Off heat, combine pasta with the sausage sauce
Add the egg yolk and parmesan mixture to the pasta
Add pasta water gradually until the sauce is glossy and creamy
