Potato And Cauliflower Curry
  1. Heat the oil in a large saucepan over medium heat.

  2. Add the onion and gently fry for 5 minutes until soft.

  3. Add the curry paste and fry for 1 minute to release the flavours.

  4. Add the potatoes and cauliflower and stir until the vegetables are coated in the curry mixture.

  5. Add the tomatoes, coconut milk and rice, and bring to the boil.

  6. Turn the heat down and gently simmer for 15 minutes, stirring occasionally, until the rice is al dente (soft to the bite).

  7. Stir in the spinach, then season with salt and pepper and serve.
