Blend tofu, miso, vinegar, sesame paste, honey, garlic, and salt until smooth.
With blender running, drizzle in olive oil until creamy.
Taste and adjust with more miso, vinegar, or honey as needed.
Chill for 30 minutes before serving.
Toss with greens, add lemon juice, and sprinkle Parmesan or crumbs if desired.
