Simmer the chicken pieces in bouillon, covered, 30 min.
In a separate pan, melt the butter. Sauté the onion 2 min.
Add the rice to the onion. Sauté 1 min.
Add spinach, salt, and pepper. Sauté 2 min.
Scoop the rice mixture into a casserole pan. Lay the chicken pieces on top. Pour in the bouillon. Bake at 200° C 30 min.
