Crispy Rice Chicken Cucumber Salad With Chili Peanut Butter Crunch Dressing
  1. Preheat oven to 400 degrees. Mix cooked rice with 1 tablespoon sesame oil and spread over a sheet pan. Bake for 30 minutes, stirring halfway through.

  2. Chop cucumbers and scallions and pat dry.

  3. Combine all sauce ingredients. Adjust to taste.

  4. Combine cucumbers, rotisserie chicken, scallions, and sauce.

  5. Top with crispy rice (do not mix into the big bowl, otherwise it will lose its crunch) and any other optional toppings.
