Cook rice noodles or ramen separately according to package directions
Heat neutral oil or coconut oil in a large pot over medium-high heat
Add ground pork and cook until browned, seasoning with kosher salt and freshly cracked black pepper to taste
Add smashed lemongrass pieces, diced shallot, grated ginger, and grated garlic cloves to the pot
Stir in Thai red curry paste, curry powder, ground cumin, ground coriander, and ground turmeric
Add fish sauce and soy sauce, stirring to combine
Pour in coconut milk and chicken broth, bringing to a simmer
Add lime zest and adjust seasonings with brown sugar or honey, fish sauce, and lime juice to taste
Add baby bok choy and cook until tender
Divide cooked noodles into bowls and ladle soup over top
Drizzle with toasted sesame oil and garnish with Thai or Fresno chili slices, lime wedges, green onion tops, cilantro or Thai basil, and chili oil or chili crisp
